<p>Have you ever woken up with the insuppressible desire to eat a specific thing? Not just eat it, but to make it?</p><p>That’s me, every week...multiple times a week.</p><p>Some days, I’m too busy to give in, and after a few days, I forget about it. Other times, I just can’t let it go. I’m up at night, imagining how good my latest fixation must taste; even if I’ve never tasted it before; the way the ingredients might come together, the endless possibilities and wonders of the flavors that could be.</p><p>And before I know it, I’m in the kitchen, banging pots and pans and slamming oven doors at 2 a.m.</p><p>This lowkey sounds like a form of OCD, but I promise I can resist… sometimes. Maybe.</p><p>This week’s fixation isn’t anything uncharted, it’s just cake. But specifically, Vanilla Cake with whipped cream frosting and strawberries.</p><p>Two days ago, I finally gave in. I decided to bake one of my favorite vanilla cake recipes. Let me mention here: I had a long day and was completely exhausted, but I couldn’t help myself. </p><p>I embarked on the treacherous journey from my room to the kitchen in the hush of night and began crafting my nocturnal mixtape—the hum of my mixer and the clanging of pans providing the soundtrack.</p><p>But alas, mental fatigue got the better of me: I forgot to add the sugar 😢. Something that had never happened to me in my life. Thankfully, I realized it early, pulled the pan from the oven, and found a way to add the sugar. Any baker knows that adding sugar last isn’t ideal—it can ruin the texture—but I had no choice. I needed to make the cake and didn’t have enough ingredients to start over in the middle of the night.</p><p><br/></p><p>The first cake came out okay—the top was a little crunchy, but I’d say that gave it an extra “umph.” The second cake, however, met a bleaker fate. I got so carried away that I forgot it in the oven, and it got… lightly toasted; an understatement. </p><p>I stood there, staring at the horror for a few minutes, before just turning around and going to bed.</p><p><br/></p><p>The story doesn’t end there, thankfully. I was able to secure more raw materials the next day and completed this week’s “side quest.”</p><p>There were a few more hiccups while frosting the cake (like forgetting to buy the strawberries and almost toppling it 😭) but in the end, I succeeded.</p><p>I only had two slices (it was good, don’t worry), but now I can sleep in peace, savoring the lingering satisfaction of giving in to this week’s cravings.</p><p>P.S. My family’s used to it; I’m pretty sure they secretly love waking up to surprise goodies every week.</p>
